Firstly - ingredients - Frozen Mangoes and Milk powder. 

I gave myself a pat for trying this amazing recipe. The result was simply superb and I had the satisfaction of making the best use of fresh Mangoes in season. A big thanks to Nandita of Saffron Trail, who shared this brilliant, fuss & mess free idea. I urge all of you to try this easy recipe. 

One of the quickest dessert in a jiffy !!  You can surprise anyone who might visit unannounced.  Try this for yourself now.

  • 1 cup frozen ripe mango chunks ( Use a non fibrous variety)
  • 2 heaped tbsp milk powder (full cream/ skimmed)
  • Fresh mango pulp or chopped for topping (optional)
  • Chop the ripe and sweet mangoes into bite size pieces and lay flat in a Ziploc. Freeze for 4 hrs minimum.
  • Place the frozen chunks in a mixer grinder. Sprinkle milk powder evenly. Pulse for few seconds.
  • Stop and scrape the sides and continue to pulse until the mixture comes together.
  • Scoop out immediately for a soft serve or freeze for 20 minutes to firm up.
  • Double or triple the quantity as required or make individual portions separately.
  • Try replacing mangoes with bananas (I tried it and it is as good), papaya or chikoo... or come up with any other fruits or combos as you please.  Tell me if you hit anything great !!
