EASY EGGLESS STRAWBERRY MOUSSE

When someone prepares or talks about easy desserts, I am all ears and give it an attempt. By the way, who would not? I was very much impressed by this version of Strawberry Mousse recipe because of three reasons. One - It is egg less,Two - easy to prepare and Three - can be prepared quickly

The recipe source is from Chef. Venkatesh Bhat, telecast on Vijay TV's Samayal Samayal, a popular cookery show in Tamilnadu.

It took around 30 minutes for me to complete preparing and assembling the dessert and the result was fabulous. My family thoroughly enjoyed the treat. As Christmas and New year is round the corner, try this simple dessert to make your festival menu more interesting. Merry Christmas and a Happy New Year in advance.

INGREDIENTS

For the Strawberry Puree
12 to 15 Fresh Strawberries + 3 tbsp of sugar

For the Cream layer
250 ml of fresh heavy whipping cream
5 to 6 tbsp of Sugar

Other ingredients
1 packet of butter cookies
1 tbsp of melted butter
Grated chocolate and few chopped strawberries for for topping

METHOD

  • Puree the strawberries with sugar and cook for 3 to 4 mins in a microwave or stove top to form a thick sauce and let it cool.
  • Beat the whipping cream and sugar in a bowl to form soft peaks. Take care not to beat too much.
  • Gently fold the strawberry puree into the whipped cream so that it blends well.

  •  Powder the cookies in a dry mixer jar. To this, add melted butter and turn it once or twice. It forms a mass.
  • Assemble the serving cups/ glass. Press 1 tbsp of powder into each. Top it with some strawberry cream. Again layer it with some cookie mix and chopped strawberry. Finish the layer with more strawberry cream and grated chocolate.
  • Refrigerate for 4 to 6 hrs and serve chilled.
  • Every mouthful is enjoyable.

NOTES
  • My berries had the right amount of  sweetness. The sugar that I added was sufficient. Adjust according to your preference.
  • You can use any cookie or biscuit of your choice. I chose butter cookies to add more taste.
  • You can substitute strawberry puree instead of chocolate for a final topping. Ensure you reserve some when you prepare the puree.
