This is one of the many inexpensive (time and money) snacks introduced to me during childhood (that I love a lot) and has a special place in my heart. It has many a times taken part during play time with friends and has been an important ingredient while we pretended to cook with our toys. Those were days when households neither had fancy gadgets like an OTG/ cooking range nor access to plenty of snacks, sweets or pizza joints that we have now. Moms will prepare such snacks in a jiffy with whatever stock of groceries they had at that moment. Happy days! 

Puffed rice is produced in different parts of North, East and Southern India and as well in Nepal and Bangladesh. It is primarily used as a snack, breakfast cereal, street food and also finds occurrences in festive menus both as a savoury and sweet - Pori urundai (Sweetened Puffed rice jaggery balls), Upma (a delicacy made by soaking Puffed rice and seasoning it with spices which is unique to Andhra), the most popular chaat in demand ...Bhel puri (recipe here) and so on. 

The recipe featured here is my mom's version. The ingredients can be easily grabbed from your pantry. The cook time is less than 5 min and can treat a sizable crowd. I am saying this because the product volume is great. A little can actually be a lot when it comes to Puffed rice.

So, you don't have to always go for Popcorn to get that Sunday movie experience at home. Puffed rice @ Pori@ Murmura @ Mudi when spiced, will give you the equivalent impact. Accompanied with a cup of steaming hot Tea will finitely warm you up and lift your senses. Off to the recipe now.

  • 150 gms Pori/ Puffed rice (almost 3/4th from a 200 gm)
  • 10 ml coconut oil
  • a generous dash of asafoetida
  • A fistful of peanuts/ roasted gram
  • 2-3 flakes of garlic (crushed) (optional)
  • 1 tsp mustard seeds
  • 1 tsp sugar
  • 1/2 tsp chilli powder
  • 2 -3 red chillies 
  • 2 sprigs of curry leaves
  • two dashes of salt 
  • Heat coconut oil in a heavy bottomed Kadai ( preferably Iron).
  • When hot, pop the mustard seeds and throw the curry leaves in. Let it fry and dry out. Add asafoetida
  • Add peanuts/ roasted gram at this point and fry until they turn crisp.
  • Add the red chillies, crushed garlic flakes and fry well.
  • Switch off and add turmeric, chilli powder and 1 tsp sugar.
  • Add the puffed rice immediately and keep mixing gently (a roll over motion) to coat the spice mix well.
  • Turn the heat on and roast on a simmered flame. You'll feel the crinkle when the spatula touches the puffed  rice. Continue for 2 - 3 mins and turn off the heat.
  • Leave it in the Kadai until it turns warm. Serve small portions in a deep dish along with Coffee or Tea.
  • Or cool and store the lot in an airtight box. Stays well for 3 days. But tastes best on the same day.

  • 3/4 பாக்கெட்  பொரி 
  • 10 மில்லி தேங்காய் எண்ணெய் 
  • ஒரு கைப்பிடி வேர்க்கடலை(அ) பொட்டுக்கடலை 
  • 2/3 பல் பூண்டு  (தேவைப்பட்டால் )
  • 1 தே .க  கடுகு 
  • 1 தே .க  சர்க்கரை 
  • 1/2 தே .க மிளகாய் தூள் 
  • 2-3 காய்ந்த மிளகாய் 
  • 2 ஆர்க்கு கறிவேப்பிலை 
  • உப்பு ( சிறிதளவு )
  • ஒரு இரும்பு வாணலியில் தேங்காய் எண்ணையை  சூடாக்கவும் . 
  • காய்ந்ததும் பெருங்காயம், கடுகு, மிளகாய் வற்றலை வெடிக்க விடவும்.
  • வேர்க்கடலையை பொரிக்கவும்.
  • பின்பு  நசுக்கிய பூண்டை அதில் சேர்த்து வதக்கவும்.
  • பூண்டு வதங்கியவுடன் அடுப்பை அணைத்துவிடுங்கள். உடனே மஞ்சள் தூள், மிளகாய் தூள் மற்றும் சர்க்கரை சேர்க்கவும். 
  • பொரிந்தவுடன் அதில் பொரியை  சேர்த்து மெதுவாக சிதறாமல் சுற்றி  கிளறவும். வறுபட்ட மசாலாவுடன் பொரி  நன்றாக சேர  வேண்டும் .
  • அடுப்பை மீண்டும் எரிய விட்டு சிறு தீயில் கொஞ்ச நேரம் பொறரியை வறுக்கவும். ஈரப்பசை இருந்தால் அது வெளியேறி  பொறி மொறு மொறு என்றாகிவிடும்.
  • அடுப்பை அணைத்து  ஆறும் வரை வைத்து , பின்பு காற்று புகாத ஒரு டப்பாவில் போட்டு வைக்கவும். மூன்று நாட்களுக்கு மொறுமொறுப்பு குறையாமல் சுவையாக இருக்கும்.
