CHUNKY PEANUT BUTTER - Edible Homemade / DIY gifts for the Holiday Season I Learn how to make Peanut Butter at home

Happy Smoothie and Crunchy New Year everyone. .... As the New Year dawns, let us all hope that it is filled with promises for a brighter and prosperous tomorrow. While the whole world is geared up to celebrate with family and friends it would be fitting to delight everyone with homemade edible gifts. And, I have already given you the hint about today's recipe. 


There are two kinds of people on this earth. First category are people who love Peanut Butter and the second are people who LOVE peanut butter all in capitals and we at home belong to the second. Its a good alternative to dairy fat in terms of balancing both saturated and unsaturated fats and finds versatile use in confectionery and bakery. While store bought butters can be a bit pricey, it saves a lot of money  and time when we make it at home. I have used store bought salted peanuts (very basic ingredient found in all stores) in this recipe. However, if you prefer to pan or oven roast peanuts yourself, please do so. The cook time varies in that case. With all the goodness in store, I am super excited to share this Vegan delight with you  all.

INGREDIENTS

  • 2 cups roasted and salted Peanuts (store bought or homemade)
  • 4 -  tbsp  Peanut / Vegetable / Canola Oil
  • 2-3 tbsp Honey
METHOD
  • Slightly warm up the peanuts in a pan. Say just 2 mins. This helps release all the essential oils. 
  • Transfer to a food processor and start pulsing. Stop in between and push down all the content that may stick to the sides. If you prefer the chunky version, reserve a fistful of broken bits to be folded in later.
  • Continue to pulse until the mixture turns very smooth. The mixture first crumbles and then turns to a paste. Add the oil and honey and continue to pulse until everything comes together. 
  • Fold in the chunks and mix with a spatula.
  • Transfer into a clean glass jar. Keeps well for 4 weeks. But ours got over within a week. 😜
