BEETS AND BERRY BREAKFAST SMOOTHIE
Yes, yes, yes. The picture says it all. I have already spoken enough about Breakfast smoothies. So, to know what that was all about.... click here please.
This time I replaced a fruit with a vegetable and my choice was Beetroot. Some ideas occur instantly and I wanted one more incorporated with the same alphabet and " Bingo".. I zeroed on Blueberries. But when it came to colour intensification the beets won hands down.

INGREDIENTS
- 1 cup frozen Beetroot ( cut into bite sized pieces)
- 1/4 cup frozen blueberries
- 3-4 Medjool dates
- 10 Almonds
- 1 tbsp Sunflower seeds
- a dash of Chia seeds
- 1/5th cup cold water
- 1 tsp honey ( optional)
METHOD
- Place the Beets and berries in a mixer. Add cold water and pulse the mixture. Continue to run until it resembles a thick smoothie.
- Collect it in serving bowls. Top up with dates, sunflower seeds, chia and serve chilled.
- You can also grind the dates along with the beets and berries if you prefer.
Ohhh, such a power packed smoothie. I like.

DeleteAwesome recipe Sowmya! If the dates are added in the blender, honey can be eliminated I suppose. Love the gorgeous color :)
ReplyDeleteThank you Ammu. Of course, the honey can be eliminated. That is why I have mentioned it optional. The beets and berries are already sweet. But freezing generally brings down the sweetness quotient. Hence the addition of dates. Again, some may feel the sweetness ok. They can eliminate the dates as well if they feel. Replacing berries with Bananas is a killer combo as well and will not require any extra sugar. Try this version when you can and let me know. Your feedback is important to me.
