VEGETABLE MASALA SANDWICH - Breakfast on the go - Step wise recipe

"Bread is the staple food of the world". I know none who would disagree this statement. It is one of the oldest prepared food with a long history that can be traced to European origin. Fast to cook, good to eat and the most comforting to-go food for busy mornings, sudden cravings and as a casual snack anytime.

A sandwich with a good filling becomes a sumptuous meal. It is a healthier option to take breads baked out of other flour sources as opposed to plain white, bleached flours. I used store bought Honey and Oatmeal bread with Chia seeds for an extra serving of goodness and is low in GI (tried and tested). For those who want to know more on GI - Its the rate at which a food digests and how sharply it can raise your blood sugar values. Such foods are given a score between 0 and 100 and categorized low, medium and high.

In this recipe the vegetable filling is the start ingredient than the bread itself. This filling @ side is one my most favoured dishes that  my MIL prepares. This filling is very versatile and makes life easy when prepared ahead. You can use it as an accompaniment with Roti, Naan, Paratha, Plain Rice or any kind of bread and rolls.
A small serving on your breakfast platter makes you good to go.

  • 2 Slices Home baked or Store bought bread ( or) as required
  • 1 tsp butter at room temperature
  • 1 tsp Tomato Ketchup/ Sauce
  • 1 tsp Mint Chutney/ Green chutney ( Click for recipe)
For the Vegetable Filling
  • 2 Onions chopped
  • 2 Capsicums chopped
  • 2 Carrots chopped
  • 2 Potatoes chopped
  • 1 cup fresh peas/ frozen
  • 1 cup chopped beans
Grind together
  • small piece cinnamon
  • 2-3 cloves
  • 2 cloves garlic
  • 1 tsp Shah -Jeera/ Caraway seeds
  • 1/2 tsp Fennel
  • 1 green Cardamom
  • 1/4 tsp coriander seeds
  • 3-4 black pepper pearls
  • 2-3 red chillies
  • 1 tsp desiccated coconut
  • 1 tbsp sauteed  Onions
  • 1 big ripe tomato or 2 medium sized
To temper
  • 1/2 tsp cumin seeds
  • 1/2 tsp mustard seeds
  • 1 tbsp Olive oil/ cooking oil
Other ingredients
  • 1/2 tsp turmeric powder
  • Salt to taste
  • 1/2 tsp Sugar
  • pinch of chaat masala (optional)

  • Microwave all the vegetables except Onions and Capsicum until soft yet firm.
  • Scoop out 1 tsp butter and set aside to soften.
  • Except tomatoes and onion, grind all ingredients indicated under 'Grind Together' into a coarse powder first.
  • Heat 1 tbsp oil in a Kadai and add Mustard and cumin seeds. When they pop add the chopped onions and sautee until translucent. 
  • While doing this,transfer 1 tbsp of sauteed onions to the mixer. Add the tomatoes and quickly blend everything to form a smooth paste.
  • Go back to the Kadai and add the capsicums and saute on high flame. Add a little salt at this point. Add turmeric powder and continue until the capsicums are done yet firm.
  • Add the spice paste and cook for few minutes. Then add the cooked vegetables, required salt, sugar and chaat masala. Mix well.
  • You need not saute for a long time as the vegetables are already cooked. Just mix until all the spices blend well and the vegetable mix comes together. 
  • Turn off the heat and cool. 
  • Butter the bread on all sides or add it directly to the hot skillet/ tawa. Need not remove the crust. I don't. 
  • Cook on medium heat until surface turns golden. Flip and cook the other sides. Add more butter if you prefer.
  • Once both the slices are toasted, remove from heat and quickly apply green chutney on one side of one slice and tomato ketchup on the other slice. Spread well till the corners.
  • Spread out 1 tbsp of mixed vegetable sabzi on one coated slice and spread till the corners.
  • Place the other slice on top and press well so that it stays in place.
  • Put it back on the skillet and toast again for one minute. Using your spatula or a butter knife, cut diagonally to make two pairs.
  • Transfer to a serving plate and enjoy warm and crisp. Or transfer it to an aluminium foil and wrap when it cools down. Tastes great without any dip.
