RED BEAN SUNDAL
I bought some Red China Beans from Little India sometime back with the thought of preparing something similar to the Dhal Makhni type but my husband is not too keen to have it. I broke my head for sometime not knowing what to prepare and finally settled for the simplest SUNDAL. It turned out to be a great evening snack that we enjoyed along with hot tea.
SUNDAL is the most welcoming dish that can be had on a typically hot summer day or during winter. It is one of the most popular mobile vended healthy snack right from park benches to beaches. Besides being popular its a good protein substitute and ideal for a mid morning or evening snack.
Preparation time : 8 hrs Cooking time : 10 mins Serves : 2 to 3
Ingredients
Red Bean ................................... 3/4th cup
Grated Ginger............................. 2 tbsp
Mustard Seeds............................ 1 tsp
Urad Dhal.................................. 1 tsp
Asafoetida.................................. 3 pinches
Green Chillies............................. 3 to 4 finely chopped
Curry Leaves............................. 2 sprigs finely chopped
Grated Coconut......................... 2 tbsp
Cooking Oil............................... 2 tsp
Salt.......................................... to taste
Sugar....................................... 1/2 tsp

Red Bean ................................... 3/4th cup

Method
- Soak the red bean overnight or for 8 hours and pressure cook until soft after slightly salting it. Keep aside.
- Heat Oil in a kadai and splutter mustard seeds followed by urad dhal. Add the asafoetida powder, chopped green chillies, grated ginger and curry leaves and saute well. Add 1/2 a tsp of sugar.
- Add the cooked bean to this and fry for a minute till it mixes well. Keep the flame low to prevent the bean from drying. You can slightly sprinkle water if you want. Check the salt content and add more if desired. Add the grated coconut to it.
- Mix well and keep the kadai closed for two minutes and switch off the flame. Serve hot.

Notes
- You can add shallots, onion and garlic in the recipe. It enhances the flavour.
- A small pinch of chaat masala or garam masala powder would taste good.
- I personally like Sundal as an accompaniment with curd rice. Try it if you have not.
