I’m a foodie at heart but being the mother of 3 kids, it’s not always easy to keep up with fancy dinners… so I rely on the support of other blogging moms like me to help along the way.
There’s no denying that Vietnamese food is delicious, but there are plenty of dishes in this cuisine that aren’t vegetarian or vegan friendly. If you like Banh Mi but prefer to go the cruelty free option, try these delicious seared tofu sandwiches which taste almost exactly like the real deal, with the added benefit of using tofu instead of meat.You’ll notice that the list of ingredients and the instructions are rather long but don’t worry, rest assured this recipe is very easy and it can be followed by anyone, regardless of their skill level.

The list of ingredients is rather long so we’re going to break it in three.
For the Tofu
- Sesame Oil, 2 TBSP
- Mirin, 2 TBSP
- Lime Juice, 1 tsp (Freshly Squeezed)
- Soy Sauce, 2 TBSP
- Garlic, 1 tsp, minced
- Ginger, 1 tsp, minced
- Lemongrass, 1 tsp, mined
- 250 grams of extra firm tofu, sliced into thin and even slices
- ½ carrot
- 1 daikon
- ½ cucumber
- 1 Jalapeño (This can be ignored if you don’t like spicy food)
- Rice vinegar, 1/3 cup
- White vinegar, 1/3 cup
- Sugar, 1 TBSP
- Baguette or Ciabatta, cut into desired portion sizes
- Sirracha or ketchup if you don’t like spicy food

As with the ingredients, we’ll break the instructions in three categories, starting with the hardest one.
For the Pickled Veggies
- Slice your carrot, daikon and cucumbers into matchsticks. If you’re adding Jalapeño, cut ¼ of one into thin slices, or more if you like spicy food.
- Place your sliced veggies in a glass jar. There’s no need to leave a lot of space in there.
- In a bowl, mix the vinegar, sugar and salt until it’s dissolved. If it’s too thick or not enough to fill the jar, add water.
- Make sure all the vegetables are covered with the mixture.
- Cover the jar and leave in the fridge overnight. You can also wait for longer, if you’d like a stronger taste.
For the Tofu:
- In a bowl, mix your oil, mirin, soy sauce, lemongrass. lime juice, garlic, pepper and ginger.
- Mix until everything has been integrated properly.
- Dip your tofu in this mixture so that it’s completely coated and let it soak for a couple of minutes.
- Wrap your tofu in plastic wrap or put it in a freezer safe bag.
- Leave your tofu in the fridge overnight
For the Sandwiches:
- Heat up a frying pan and coat with Sesame Oil (or any other oil with a high smoke point, such as peanut and corn.
- Once the pan is hot, spread your tofu on it so that the slices don’t touch each other.
- Fry the slices so that both sides are browned.
- While your tofu fries, take your baguette or ciabatta portions and slice in half.
- Slather with mayonnaise, Sirach, ketchup or anything you’d like to use.
- Fill with your pickled vegetables and the tofu slices.
And that’s it. Now you’re ready to enjoy delicious, cruelty free, Banh Mi sandwiches.
