BEETROOT HALWA

'Halwa's of different kinds are so much home to Indian cuisine. Of veggies, Carrot Halwa is highly common. I have earlier posted this hereBeet roots are a favourite ones at my home. Apart from typical beet root poriyal, raithas and beet root rice are really appetizing. Somehow, I tend to exploit beets to their full capacity of being flexible for any recipe.

Now, for this sweet dish. Taking advantage of their inherent sweetness (and of course, their awesome colour !!), this dish can be a pleasant dessert for any festive occasion or parties. Don't mind the calories - simply devour them with fervour and prepare yourself for a run !! ;-)

INGREDIENTS
  • 5 Big Beetroot 
  • 11/2 -2 cup granulated sugar (adjust per taste)
  • 2 tsp cardamom powder
  • 1/2 cup fresh milk
  • 5-6 tbsp ghee
  • 4 tbsp Chopped nuts (cashew nuts and pistachios)
  • a small cube of unsweetened Khoa- grated (optional)
METHOD
  • Wash beets, peel the skin and grate. 
  • Heat 2 tbsp ghee in a thick bottomed pan/ deep dish and  fry the chopped nuts. Fish them out and saute the grated  beets in the same pan for 5 min. Add 1/2 cup of fresh milk and cook on high flame for few minutes.
  • Add sugar and mix well. The entire mixture turns into a thick sludge as the sugar melts and starts to reduce in volume. Add grated khoa for more texture. 
  • Add rest of the ghee and cook further to until the volume condenses like jam. Add cardamom powder and mix well.
  • Throw in the chopped nuts and give a final mix. Turn off the heat. Serve warm or cool topped with more chopped nuts.
