VANILLA FRUIT CUSTARD

Hello everyone. I had been on a very long vacation to India. Since then, I had no time for blogging as I was busy catching up with relatives and friends. I did miss my space and I am back with a dessert recipe this time. It is to mark and celebrate one year of my blog completion that is already over on Deepavali day. Nevertheless, I am happy about my lousy blogging.



Vanilla Fruit Custard was one of my top priorities as a child and my mother would prepare this very often for dessert. Depending on the time factor she used to either make the Pouring custard or the Setting custard. Making the setting custard was a little time consuming but worth the time and effort. Both are equally delicious and I love both these versions.

Preparation Time : 5 min       Cooking Time : 25 mins        Refrigeration  : 2 to 3 hrs

INGREDIENTS

Vanilla Custard Powder(Store  bought) ............ 4 tbsp heaped
Milk ( FULL CREAM or FRESH MILK) ........  3/4 Liter + a little
Sugar........................................................   4 tbsp ( Adjust as per your taste)
Condensed Milk .........................................  1/4 cup
Ripe Banana ..............................................  2 Sliced
Apple ( Red Delicious) ............................... 1 cored and chopped
Hersheys Chocolate syrup .......................... For topping

METHOD
  • Mix the custard powder with a little cold milk and set aside. There should not be any lumps.
  • Boil the milk in a thick bottomed vessel and simmer as soon as it boils.Cook until the milk starts reducing in volume. Add sugar and continue to cook. The mixture will reduce to somewhere close to half a liter. Then add the condensed milk.
  • At this stage, simmer and slowly fold the custard powder mixture into the boiling milk.




  • The mixture thickens further. Keep stirring and cook the mixture until the raw flavour of the custard mixture is felt no more. Please remember that the mixture gets burnt if you do not stir it continuously. 
  • Switch off and remove utensil from the stove top and let it cool down completely. The custard mixture thickens further on cooling. 
  • Chop and slice the Apple and Bananas and add them to the Custard and mix well. 


  • Transfer the contents to your serving bowls and refrigerate. Serve chilled. Enjoy

NOTES
  • I have added only Apples and Bananas as I did not want to load the custard with fruits. 
  • If u prefer adding more fruits then I recommend you to add only pulpy fruits like Pappaya or Mango. Juicy fruits ooze out water and tend to make the custard runny on storage. Adding or eliminating any of the pulpy fruits is left to you.  
  • If you do not want to add condensed milk then just increase the quantity of sugar to 6tbsp instead of 4. Ensure that you cook and reduce the milk to give a thicker consistency.
