METHI PURI - STEP WISE RECIPE

My husband loves Fresh Methi Leaves and always tries to fish one out from the Greens section whenever we go Vegetable shopping. He grabs them as they don t show up in the market very often. I do use fresh leaves in my cooking but I equally love using Kasoori Methi. This fragrant bitter leaf  in any form is a taste enhancer and is a medical reservoir. Given a choice, I ll opt for the second one as it appeals more to me.

So last time when my husband bought a bunch of tender and fresh Methi leaves, I first decided to prepare Methi Parathas and googled for some recipes.There were so many Paratha recipes popping up one after another and the procedures were elaborate. I was in no mood for anything time consuming and in an impulse I changed my mind and decided that this time it was going to be Puris instead of Parathas and was quite happy with the decision. The result was good and my better half liked it a lot.

Please go ahead and try this recipe. I am sure you will like it.

I have given an eye's measurement of ingredients that is approximate and it yielded 10 medium sized Puris.

INGREDIENTS

  • Wheat Flour .............................. 2 cups
  • Methi Leaves ...................... 1 small bunch
  • Ginger- Garlic and Green Chilli Paste .... 1 tbsp
  • Ajwain ..................... 1 tsp
  • Chilli Powder .......... 1 tsp ( Optional)
  • Turmeric Powder ........ 1/2 tsp
  • Asafoetida ......................... A pinch
  • Garam Masala Powder .................. 1 tsp
  • Amchur or Chaat Masala Powder ..........A pinch
  • Besan/ Gram Flour ................ 1 tsbp
  • Salt ...............................  To taste
  • Sugar.......................... 1/2 tsp
  • Water ......................... To knead the dough
  • Oil ............................ For frying
  • Ghee ......................... 1 tbsp
METHOD
  • Wash and clean the Methi Leaves and chop them finely. Prepare Ginger- Garlic and Green chilli paste. 
  • Heat a Kadai and add 1 tbsp of ghee.  Roughly pound the Ajwain in a pestle and splutter it in ghee. Then add the Ginger- garlic and Green chilli paste and fry till the raw flavour leaves. Add the Methi leaves to this and saute till it wilts. Add the Chilli powder, Turmeric powder, Asafoetida,  Garam masala, Amchur / Chaat masala powder and  salt. Mix well
  • Add the Besan/ Gram flour in the end and saute well. Switch off and cool the mixture. 


  • Once the mixture cools well, add it to the wheat flour in a mixing bowl. Add just the required salt for the flour and knead into a stiff but pliable dough by adding water little by little. 


  • Heat Oil in a Kadai. Roll the dough into smooth balls. Take care no fissures are formed.  Now gently pres and flatten the ball and dust with flour. Roll them into discs of 6 to 7 inches. Gently drop them in the hot oil and deep fat fry into Puris. 
  • Drain them on paper towels.


  • Serve them hot with Dahi or any Pickle. 
  • I served them with a dollop of Light Sour Cream, Mango Pickle and some  Mango Pachhadi. It was divine.


  • HAPPY EATING!!
NOTES
  • Knead the dough after you start heating the oil. Use less water to knead dough for Puris. If you add more the Puris absorb more Oil while cooking.
  • My Mother always kneads dough in small batches for Puris. This prevents the dough from drying out soon and also helps the Puris to puff and stays that way for a long time.
  • Oil temperature is very important for the Puris to puff right. Ensure that the oil is really hot and your Puris should cook and puff in less than 2 minutes. At the same time the oil should not smoke. 
  • Once you drop the Puri into Oil, it takes a deep plunge before it surfaces and puffs. Gently press the corners and it automatically flips over to cook on the other side.
